Getting Good Nutrition
Almost without exception dietary guidelines begin with the encouragement to "enjoy a wide variety of nutritious foods". This ensures that your family is obtaining all necessary nutrients.
Sometimes we are faced with fussy eaters who resist trying new foods. Try hiding them in other foods.
This recipe makes that easy. Potatoes are a good base for hiding other vegetables. Try this recipe, and you may be surprised.
SESAME SEED HASH BROWNS
Peel and grate 2 medium potatoes, 1 medium carrot, and one medium zucchini.
Place together in a bowl with 1 or 2 tablespoons sesame seeds, salt to taste, and 2 eggs. Mix well.Brush a frypan with a little oil and heat. Place spoonfuls of the mixture in the pan, and flatten slightly. Cook for 4-5 minutes each side, or until golden. Serve with a fresh mixed salad, and enjoy.
Research by Professor Mark Wahlquist of the Monash University has shown the advantages of having this wide variety, especially from plant foods. Whether or not you choose a fully plant-based diet, be sure to include that wide variety of plant foods, and so increase your intake of those naturally occuring phytochemicals.
